Fiaire 2011 White continues his aging, but we had to relocate some 225 liters barrels in 400 liters barrels. To minimize oxidation during the extraction phase we fill up the barrel with carbon dioxide and we work by gravity (no pumping). The fork-lift truck is an indispensable tool to carry out this drawdown. These precautions are necessary as the wine contains no sulfur at this stage. Therefor it is not protected against oxidation. The barrels are then topped up with the lies that we have carefully recovered from Lauzina white dregs. These dregs will be resuspended in the spring with regular bâtonages than we realize.
