The word from the Winegrowers: a gourmet wine

The wine is produced from vines which are planted near a small barn which served not so long ago as a storage place for grain to feed the horses which plowed the vineyard. These parcels of land in the small cold valley of the Combarelles at the entry of the Massif Fontfroide.
The thick layer of sandy soil is naturally poor in nutrients and drains well. These soils permit us to harvest healthy grapes at optimal maturity.

Blend

60% Cabernet sauvignon, 20% Merlot, 20% Syrah. Yields 50 hl/ha.

Terroir

Combarelles valley in Massif de Fontfroide : sandstone

Vineyard

Guyot.

Vinification

The destalked harvest cooled from the vatting. The duration of the maceration is about 10 days, always according to the tasting.

Aging

No maturation for this vintage. The wine is bottled young, in early summer.

Wine Tasting

A deep red color. Bouquet filled with crisp fruits. Bouche : Vast, harmonious and beautifully concentrated.

Garde

To be drunk in the 5 years.

Our preference for serving

Moroccan chicken stew served with black olives accopanied by fresh tagliatelles.
